Loaded Baked Potato Casserole

 
This was taken with my dumb-phone. The next time I make this dish I promise to hold back the troops long enough to get a decent picture. (Pictured with Kielbasa)


8-10 potatoes, cut into 1/2-inch cubes (I leave the skin on)
1/4 cup olive oil
1 1/2 tsp. salt
1 TBS ground pepper
1 medium onion - diced
2 cloves garlic - crushed
1 lb. meat (bacon, cubed chicken, kielbasa, ground sausage, etc.)
2 cups cheddar cheese - shredded
green onions - diced

Preheat oven to 500 degrees.
Toss cubed potatoes with olive oil, salt, and pepper. 
Spread in 9x13 pan.
Bake 50 minutes tossing occasionally.
Meanwhile, saute onion and garlic with meat or toss with cooked meat.
Top potatoes with meat, cheddar and green onions. 
Bake 5-10 minutes until cheese is melted and bubbly.
