3 TBS olive oil
2 tsp dried oregano
1 tsp ground cumin
1 green bell pepper - diced and de-seeded
1 jalapeño pepper - diced and de-seeded
1 onion - diced
1 lime (zest and squeezed
5 cloves garlic - minced
- Place roast(s) in crock pot
- Combine olive oil, oregano, cumin and drizzle over roast(s)
- Add lime zest, lime juice, and lime
- Add remaining ingredients
- Cook on low 8-10 hours or high 4-6 hours
- Shred and serve (I usually add some of the veggies and juice from the crock pot to the shredded pork)
