Lean and Clean Crock pot Pork Carnitas

I adapted this recipe from Simply Scratch to make it leaner and cleaner:

4 lbs pork tenderloin roast
3 TBS olive oil
2 tsp dried oregano
1 tsp ground cumin
1 green bell pepper - diced and de-seeded 
1 jalapeño pepper - diced and de-seeded 
1 onion - diced
1 lime (zest and squeezed 
5 cloves garlic - minced

  1. Place roast(s) in crock pot
  2. Combine olive oil, oregano, cumin and drizzle over roast(s)
  3. Add lime zest, lime juice, and lime
  4. Add remaining ingredients
  5. Cook on low 8-10 hours or high 4-6 hours
  6. Shred and serve (I usually add some of the veggies and juice from the crock pot to the shredded pork)
Serving options: black beans (soaked or canned and rinsed) heated, fresh lime slices, over romaine lettuce, with greek yogurt, over coconut rice, etc

Dump and done are my favorite crock pot recipes
It's tastier than it looks when you take the lid off...and it's as good as it smells
Shred and add some juice and veggies from the crock pot

My favorite was to enjoy: over romaine, with lime, black beans, and greek yogurt
