Fiesta Chicken
Fiesta Chicken (Fast)
4 chicken breasts, frozen or thawed
1 (15 1/2 ounce) can black beans, drained and rinsed
1 (15 ounce) can corn, drained or two cups frozen corn kernels
1 packet taco seasoning or your favorite taco seasoning equivalent to 1lb meat
1 (15 ounce) jar of your favorite salsa
1 (8 ounce) package cream cheese (Optional)
Shredded cheddar cheese
Tortilla chips, tortillas or rice
Fiesta Chicken (Clean Eating)
4 chicken breasts, frozen or thawed
2 cups dry black beans soaked
Clean taco seasoning - the equivalent to 1 pound meat
1 diced onion
1 diced large onion
Fresh or dried cilantro
Romaine lettuce
Fat Free Greek Yogurt
Take 4 frozen, yes, frozen (or thawed), boneless chicken breasts put into crock pot, 1 jar of salsa, corn drained. Keep in crock pot on low for about 4-5 hours or until chicken is cooked. An hour before it is done Add 1 can of black beans, drained. Once it is cooked, shred it (I use two forks and pull the chicken in the crockpot). Return shredded chicken to the crockpot.
Optional: Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour. It may look at little strange at this point. Don't worry. Stir in the cream cheese.
Serve over rice, in warm flour tortillas or over chips with shredded cheese on top (broil on low for a couple mins to melt the cheese) or over chopped lettuce with a spoon full of fat free greek yogurt.
